cooking takes away nutrients in all foods. some cooking methods are worse than others. microwave is the worst. i believe steam cooking is the best as far as keeping as much nutrition as possible. i hate veggies too. basically i have to force them down. one thing i do with asparagus is cut it up in a blender and mix with about 5 egg whites and cook on a skillet. i add mustard. it looks and sounds gross but its pretty good.

try grilling the veggies, it is amazing, i can eat tons of grilled veggies, asparagus is the best, i wrote about it in another thread about veggies

if you want to try smaller veggies-sugar snap peas, snow peas, green beans, and things of that sort try making a little pouch out of tin/aluminum foil cut up some slices of lemon, put a little salt on the veggies, throw the veggies and lemon in the pouch, seal it up and throw it on the grill. its delicious you can also add herbs of your choosing to the pouch, i think rosemary is really good
